A Functional Take on Flapjacks

As part of our 2019 Perfect Predictions, we asked our health and wellness trend-spotters and followers to share what they thought would be the hottest trends in food, beauty, and movement in the coming year.

2018 has brought a lot of functional and healing foods into the health and wellness scene like bone broth, collagen, turmeric, MCT oil (hello Bulletproof Coffee), adaptogenic mushrooms and herbs just to name a few. Collagen has continued to be a huge hit, whether you take it as a supplement every morning, add it into your coffee or throw it into your afternoon smoothie, it has healing properties and we are loving it. Throw adaptogens into the mix, healing mushrooms and herbs that can help lower stress, increase productivity and energy and are overall just a great addition to everyday diets. We asked some of our closest friends, you guys, our #1 fans what you predict will be trending in 2019 and one of our winners was Functional Pancakes.

What are Functional Pancakes?

Simply put, functional pancakes are taking the classic pancake and adding functional foods, such as mushrooms, bone broth, turmeric, MCT oil or Matcha for a little extra boost. That boost could be more protein, adaptogens, supplements or what have you. It’s one of the easiest ways to add health function to some of your favorite recipes. One thing that makes these functional foods so great is their versatility. Adding a scoop of collagen into your pancake mix will not take away from the delicious taste of pancakes, but it will add to this already perfect dish. Functional foods studies have been shown to decrease the risk of disease and overall, promote optimal health.

Functional pancakes are not just for the foodies or bloggers, they can be easily added to everyone’s morning routine or meal-prep. Athletes may enjoy an added boost of protein in theirs, Moms love giving their littles a quick an easy breakfast they can feel good about. Make a big ol’ batch for the kiddos all week, freeze them and quickly reheat in the morning before school. Sneak some supplements into your recipe and the kids will never know they are eating a good-for-you, functional breakfast!

3 Functional Pancake Recipes for You to Try!

You may be thinking, I don’t have time for this functional foodstuff but that’s where we step in. Check out these three recipes featuring three different ways to add functional foods to the classic flapjack recipe.

Adaptogenic Lions Mane Pancakes:

Makes 20 small or 5 large pancakes

What You’ll Need

Optional Topping:

  • Jam or pure maple syrup
  • Chopped up Perfect Bar
  • Berries
  • Nuts
  • Peanut or almond butter

Directions:

  • In a large bowl, vigorously whisk together the eggs and almond milk.
  • Add the spinach, flour, butter, salt, pepper, and mushrooms and stir until smooth. Let rest at room temperature for 15 minutes.
  • Set a cast-iron pan over high heat. When the pan is hot, add a liberal amount of butter and allow to melt. Add a half cup of the pancake batter to the pan. When little bubbles appear on the surface of the batter, use a spatula to check if the underside of the pancake is golden brown. If so, flip and fry on the other side for one to two minutes more. Repeat until all batter has been used.
  • Serve hot with butter, jam, or syrup. Pancakes are also delicious eaten cold the next day. Store in a sealed container in the fridge overnight.

Collagen Pancakes:

Makes 4-6 Pancakes

What You’ll Need:

  • 1/4 cup blanched almond flour
  • 1/4 cup coconut flour
  • 2 scoops of your favorite collagen (try Vital Proteins or Ancient Nutrition)
  • 1/4 tsp cinnamon
  • Dash of sea salt
  • 2 eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup almond butter
  • 1/4 cup raw honey
  • 1 tbsp coconut oil
  • 1/4 tsp vanilla extract
  • And more coconut oil to grease the pan

Optional Toppings:

Directions:

  • Combine almond flour, coconut flour, collagen, cinnamon and sea salt in a mixing bowl.
  • Whisk together the eggs, almond milk, almond butter, honey, coconut oil and vanilla extract in a separate bowl.
  • Mix the wet ingredients in with the dry ingredients until smooth.
  • Preheat your pan over low heat with coconut oil.
  • Once the pan is hot enough, pour 1/4 cup batter onto pan and once the batter begins to bubble at the top, flip it over and cook for another 2 minutes. Repeat until batter is gone.
  • Plate the pancakes and top with your topping of choice – enjoy!

Protein Power Cakes:

This recipe is an easy one because there are brands like Birch Benders and Kodiak Cakes who make functional pancakes even more accessible!

What You’ll Need:

  • 1 cup Kodiak Cakes Buttermilk Power Cakes mix
  • I cup milk
  • 1 egg

Optional Toppings:

Directions:

  • Combine 1 cup mix, 1 cup water and 1 egg together in a mixing bowl until smooth.
  • Preheat your pan over low heat with coconut oil.
  • Pour one 1/4 cup of batter onto heated and greased pan.
  • Cook on medium-high heat until bubbles begin to form on the top.
  • Flip and continue to cook until golden brown – plate & enjoy!
