Get a Mouthful of These Flourless Maple Almond Sweet Potato Muffins

We stand right by Katie of 24 Carrot Life in her conviction that sweet potatoes shouldn’t be pigeonholed as a strictly autumn food. Why deprive yourself of something that tastes so good when you could essentially have it year-round? We couldn’t come up with a good answer to that question, so we were beyond stoked to get Katie’s quick and easy gluten-free recipe for Flourless Maple Almond Sweet Potato Muffins. The recipe name may be a mouthful, but you won’t mind after you’ve made these and your mouth is actually full of these delicious little muffins.

Cook time: 15 minutes

Total time: 20 minutes

Servings: 9 muffins


  • 2 Maple Almond Perfect Bars, room temperature
  • 1 cup sweet potato (or pumpkin) puree/mash
  • 3/4 cup rolled oats, gluten free optional
  • 1 large egg
  • 2 tbsp. unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
