Chocolate Coconut and Almond Energy Balls

Is there anything better than coconut and chocolate? The answer is YES! An Almond Coconut Perfect Bar and chocolate. Check out how our girl Gabby from @livelaughyum took this bar and made it, well, even more perfect.

Chocolate Coconut & Almond Energy Balls

Recipe:

  • 1 Almond Coconut Perfect Bar
  • 1/3 cup unsweetened shredded coconut
  • 2 Tablespoons almond butter – any brand!
  • ½ cup chocolate chips
  • 1 Tablespoon coconut oil

Instructions:

  1. In a food processor, add Perfect Bar, shredded coconut, and almond butter.
  2. Pulse until mixture forms a ball.
  3. Roll into balls – should make about 4-5 balls.
  4. Freeze for about 20 minutes.
  5. Melt chocolate chips and coconut oil until smooth – in a microwave or stovetop.
  6. Drizzle melted chocolate over the energy balls and freeze again for 5 minutes.
  7. Enjoy!
